Chicken and Lima Beans – Ingredients

2 pounds bone-in, skinless chicken thighs (about 4–6 thighs)
1 pound dried lima beans, rinsed and sorted
6 cups low-sodium chicken broth (or water with 2 bouillon cubes)
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Optional
Additional hot broth or water, as needed during cooking

Directions

1. Prepare the Oven
Preheat the oven to 350°F (175°C). Set aside a 9×13-inch glass baking dish. Do not grease the dish.

2. Mix the Batter
In a large mixing bowl, combine the dry angel food cake mix with the entire can of crushed pineapple, including the juice. Stir by hand until the mixture becomes well combined, light, and foamy.

3. Bake
Pour the batter into the ungreased baking dish and spread evenly. Bake for 28 to 35 minutes, or until the top is golden brown, the center springs back lightly when touched, and a toothpick inserted near the center comes out mostly clean.

4. Cool
Allow the cake to cool in the baking dish for 20 to 30 minutes. As it cools, the cake may settle slightly, creating its signature soft texture.

5. Serve
Cut into squares and serve warm, at room temperature, or chilled.
