This Crispy Potato and Bacon Sheet Pan is the ultimate in simple, rustic comfort. Thinly sliced potatoes roast alongside chopped bacon, allowing them to fry in the rendered bacon fat for a perfect crunch and deep, smoky flavor. It’s versatile enough to serve as a hearty breakfast side, a steakhouse-style dinner accompaniment, or a base for loaded “sheet pan fries.”

 

Ingredients

  • Russet potatoes, thinly sliced – 4 medium
  • Bacon, chopped – 6 slices
  • Olive oil – 1 tablespoon
  • Salt & black pepper – To taste

 

Directions

Step 1: Preheat and Prep
Preheat oven to 400°F. Thinly slice the potatoes while the oven warms.

Pro Tip: Aim for slices about 1/8-inch thick. Too thick and they won’t crisp; too thin and they may burn before the bacon is done.

Step 2: Season the Potatoes
Place potato slices in a large bowl. Drizzle with olive oil, season with salt and pepper, and toss until evenly coated.

Step 3: Arrange on the Pan
Spread the potatoes in a single layer on a sheet pan. Avoid stacking slices, or they will steam instead of crisping.

Step 4: Add the Bacon
