Soft & Spiced Apple Pie Cake

 

Some desserts instantly feel like home—the kind that make you pause, inhale deeply, and remember cozy moments. Apple Pie Cake is one of those treats. It captures the warmth and spice of apple pie, wrapped in the soft simplicity of cake.

I first baked this on a chilly afternoon, craving a dessert that felt like a hug. I didn’t want the fuss of making a full pie, but I longed for that buttery, cinnamon-sweet comfort. When it came out of the oven, the whole house smelled like apple pie—warm, inviting, and impossible to resist.

 

Since then, this cake has become my go-to dessert for any occasion. Quick enough for a weeknight, yet elegant enough for guests. Perfect for family dinners, weekend brunch, or holiday gatherings, it combines nostalgia and ease in every bite.

Ingredients

Cake Ingredients

All-purpose flour: 2 cups (250 g)
Granulated sugar: 1 cup (200 g)
Unsalted butter, melted: ½ cup (115 g)
Milk: 1 cup (240 ml)
Eggs: 2 large
Baking powder: 2 tsp
Vanilla extract: 1 tsp
Salt: ½ tsp

Apple Filling Ingredients

Apples, peeled & diced: 3 medium
Brown sugar: 2 tbsp
Cinnamon: 1 tsp
Lemon juice: 1 tbsp

Optional Topping

Powdered sugar: for dusting
Whipped cream or ice cream: as desired

 

Instructions

1. Prepare the Apples

Peel and dice apples into small cubes.
Toss with brown sugar, cinnamon, and lemon juice. Set aside.

2. Make the Cake Batter

Preheat oven to 350°F (175°C) and grease a 9-inch (23 cm) round pan.
In a large bowl, whisk eggs and sugar until smooth.
Stir in melted butter, vanilla, then milk.
In another bowl, combine flour, baking powder, and salt.
Mix dry ingredients into wet until smooth.

3. Assemble the Cake

Pour half the batter into the pan.
Spread the apple mixture evenly on top.
Pour remaining batter over the apples and smooth with a spatula.

4. Bake

Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool & Serve

Let cool for 20 minutes.
Dust with powdered sugar and serve warm with whipped cream or ice cream.
