Cheesy Carrot Flatbreads
These vibrant Cheesy Carrot Flatbreads are a quick and satisfying meal or snack. Tender, finely grated carrots are combined with two kinds of cheese and spices, baked atop a flatbread until bubbly and golden.
Ingredients:
Flatbreads
- 2 medium carrots, peeled and finely grated
- 1 cup shredded mozzarella cheese (or any melting cheese)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley or cilantro (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin powder
- Salt and black pepper, to taste
- 4–6 pre-made flatbreads (store-bought or homemade)
Topping
- 1/4 cup grated Parmesan cheese
- Fresh arugula or microgreens (optional, for garnish)
Step-by-Step Instructions (Serves 4–6)
- Step 1: Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
- Step 2: Prepare the Carrot Mixture: In a mixing bowl, combine the 2 grated carrots, 1 cup mozzarella cheese, 1/2 cup cheddar cheese, 1/4 cup chopped parsley or cilantro (if using), 1/2 teaspoon garlic powder, 1/2 teaspoon cumin powder, salt, and black pepper. Stir until evenly mixed.
- Step 3: Assemble the Flatbreads: Place the 4–6 flatbreads on the prepared baking sheet. Divide the carrot mixture evenly among the flatbreads, spreading it out to cover the surface but leaving a small border around the edges. Sprinkle each flatbread generously with 1/4 cup grated Parmesan cheese.
- Step 4: Bake: Bake in the preheated oven for 10–12 minutes, or until the cheese is bubbly, golden, and slightly caramelized around the edges. Optional: Broil for 1–2 minutes at the end for an extra golden finish, watching closely to prevent burning.
- Step 5: Serve and Enjoy: Remove the flatbreads from the oven and let them cool slightly before slicing. Optional: Garnish with fresh arugula or microgreens for added color and freshness. Enjoy!
