Feta Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • ½ cup crumbled feta cheese
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ¼ red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste

 

How To Make Feta Chicken Salad:

  • Step 1: Cook the Chicken: In a skillet, cook the chicken breasts over medium-high heat for about 6-8 minutes per side, or until cooked through. Let them rest before slicing into strips.
  • Step 2: Assemble the Salad: In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives. Add the sliced chicken breast strips and crumbled feta cheese to the salad.
