This light and airy Keto Strawberry Mousse is a refreshing, low-carb dessert that combines fresh strawberry puree with sweetened, whipped heavy cream for a delightfully set texture.

 

Keto Strawberry Mousse

Ingredients:

  • 1 cup Fresh strawberries, hulled and chopped
  • 1/4 cup Erythritol or preferred keto sweetener
  • 1 tsp Vanilla extract
  • 1 cup Heavy whipping cream
  • 1 tsp Lemon juice
  • A pinch Salt

 

How To Make Keto Strawberry Mousse:

*Step 1: Prepare the Strawberry Puree: In a blender or food processor, puree the 1 cup of strawberries until smooth. Pass the puree through a fine sieve to remove seeds, if desired, for a smoother texture.

**Step 2: Mix Ingredients: Transfer the strawberry puree to a medium bowl and stir in the 1/4 cup erythritol, 1 tsp vanilla extract, and 1 tsp lemon juice. Mix until well combined.

***Step 3: Whip the Cream: In a large, chilled bowl, whisk the 1 cup heavy whipping cream and a pinch of salt until stiff peaks form.

****Step 4: Combine Mixtures: Gently fold the strawberry mixture into the whipped cream using a spatula until fully incorporated and the mousse is smooth and uniformly pink.

*****Step 5: Refrigerate: Spoon the mousse into serving cups or a large bowl and refrigerate for at least 1 hour to set.

******Step 6: Garnish and Serve: Before serving, optionally garnish with fresh strawberry slices and a sprig of mint.
