Ingredients
- 1 cup Creamy peanut butter (avoid natural/oily types)
- 4 tablespoons Unsalted butter, softened
- 1 teaspoon Pure vanilla extract
- ¼ teaspoon Salt
- 1 ½ cups Powdered sugar, sifted
- 2 cups Semi-sweet or milk chocolate chips
- 1 tablespoon Vegetable shortening or coconut oil
Instructions:
- Make the base: In a bowl, beat together peanut butter, softened butter, vanilla, and salt until creamy.
- Incorporate the sugar: Gradually add powdered sugar, about 1/2 cup at a time, until a stiff dough forms.
- Form the balls: Roll the dough into 1-inch spheres and set them on a baking sheet lined with parchment paper.
- Chill: Refrigerate for 30–45 minutes, until firm.
- Prepare the chocolate coating: Melt chocolate chips with shortening in the microwave in 20–30 second intervals, stirring until smooth.
- Dip the balls: Using a fork or toothpick, coat each peanut butter ball in chocolate. Let excess drip off, then return to the tray.
- Set and store: Chill for 15 minutes or until chocolate hardens. Keep in an airtight container.
