Ingredients

For the Batter

  • 2 large Eggs
  • 2 tablespoons Sugar
  • 1 cup (250 ml) Plain yogurt
  • 1¾ cups (250 g) Chickpea flour
  • 1 teaspoon Baking soda
  • A pinch of Salt

For the Filling

  • 2 Apples (or fruit of choice)
  • 1 tablespoon Butter (for sautéing)
  • 1–2 teaspoons Sugar (for caramelizing)

For Frying

  • Butter or neutral oil, as needed

 

Instructions

1. Make the Batter

In a medium bowl, crack the eggs and add sugar and a pinch of salt. Whisk until smooth.
Add the yogurt and mix until creamy and well combined.
Stir in the baking soda, then gradually add the chickpea flour, whisking constantly to prevent lumps.
The batter should be thick but pourable. Add a little water or milk if necessary.

2. Prepare the Apple Filling

Peel and dice the apples into small cubes.
Heat butter in a skillet over medium-low heat. Add the apples and sprinkle with sugar.
Cook for 5–7 minutes, stirring occasionally, until soft and lightly caramelized. Set aside.
Tip: Pears, bananas, or berries also work beautifully.

3. Cook the Pancakes

Transfer the batter to a piping bag or a zip-top bag with the corner cut off for even pancakes.
Heat a nonstick pan over medium heat and lightly grease it.
Pipe or spoon small pancakes (about 2–3 inches wide) onto the pan.
Place a spoonful of apple filling in the center and cover with a little more batter.
Cook for 2–3 minutes until bubbles appear and the edges set. Flip gently and cook for another 1–2 minutes until golden.

4. Serve and Enjoy

Serve the pancakes warm.
Enjoy them as-is or top with honey, maple syrup, or a light dusting of powdered sugar.
